To start, wash and slice the yacon into thin rounds or wedges. Next, bring the vinegar, sugar, salt, and water to a boil in a pot, stirring to dissolve the sugar and salt. Add any spices you want to use, such as peppercorns, mustard seeds, or coriander seeds.
Place the yacon slices in a clean jar or container, and pour the hot pickling liquid over the top. Make sure the yacon is completely covered by the liquid. Allow the yacon to pickle for at least a week in the refrigerator before eating. The yacon will keep for several months in the refrigerator.
You can use pickled yacon in salads, as a condiment for sandwiches and burgers, or as a snack on its own. It has a sweet and tangy flavour that is similar to pickled beets or carrots. Enjoy!
